Would You Bring a Salad? Cilantro Coleslaw that Keeps



Crunch, Crunch--Here's today's slaw.  It keeps in the frig several days.  Munch, munch.
I have to admit that I adore coleslaw.  I choose it over fries at the Groveland Tap (our corner bar) in St. Paul.

And I like to try it wherever I go.  I like it with mayonnaise or vinaigrette, with other vegetables or meat, with just vinegar or chicken (or both), and so on. It's easy, fast, simple, healthy, and goes with most grilled foods. If it's gloppy, I'm not a happy girl.  This coleslaw is not gloppy.   My nasty secret:  I eat it for a meal.  All by itself.  I don't get hungry for quite a while.  This salad will stay fresh in the frig for a few days or is perfect to take along to a friend's for a backyard summer do.

cilantro coleslaw that keeps  6 servings  (double for 12)

  • 1/2 head green cabbage, outer leaves removed, cored, shredded coarsely into 1/4" slices with chef's knife
  • 3 green onions, trimmed and minced (white and green parts)
  • 1 large carrot, grated
  • Small handful fresh cilantro, chopped
  • 2T fresh mint, chopped (optional)
  • Kosher salt
  • 1/4 t each crushed red pepper  and freshly ground white pepper (can sub black)
  • 2 pinches white sugar, divided
  • 2 T white vinegar, divided
  • 2-3T mayonnaise (to taste)

In a large bowl, place cabbage, onions, carrot, cilantro, mint (if using) and toss well.  Sprinkle with salt (to taste), both peppers, and the first pinch of sugar.   Add 1 T vinegar and toss well.  
Set aside.  In a small bowl, stir together the other 1 T vinegar with the mayonnaise and the second pinch of sugar.   Pour over cabbage mixture and toss well.  Taste and re-season.  Serve at room temperature or cold.   Store tightly covered in refrigerator up to 4 days. 

Solo Cook's Note:  If you'd like the salad with less fat (no mayonnaise), it's tasty with ONLY THE VINEGAR (and spices) for dressing.  If you like coleslaw a bit wetter and are going to eat it all in one day, you'll be happy with more mayonnaise.   Please skip crushed red pepper if you don't like spicy food.

  1. Cilantro coleslaw!!! Mega yum. I love coleslaw with spicy foods or rich foods. We went to a chicken and rib cookoff now long ago and had pulled pork sandwiches with slaw, it's just the perfect match. Anything cilantro is a winner in my books so great pairing.

    Thank you for your kind words and concern. My Mother had breast cancer so it has been a crazy year. Thankfully everything is good now and has settled down to normal again. You're a wonderful and caring person!
